Chipotle Pork Burgers with Avocado Aioli Recipe

For the Aioli:

  • 1/2 avocado sliced
  • 1 garlic clove minced
  • juice of 1/2 lime
  • 1/8 c mayonnaise

For the Burgers:

  • 1/2 pound ground pork
  • 1/4 c jack cheese
  • 0.5 chipotle pepper in adobo sauce minced plus 2 teaspoons of the sauce
  • 0.5 teaspoon kosher or fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • vegetable oil

Putting it all together:

  • 2 gluten-free hamburger buns
  • 1 small tomato sliced
  • 1/2 small onion sliced


  • Mash the avocado in a small mixing bowl with the garlic and lime juice. Add the mayonnaise and combine well. Cover and refrigerate until serving time.
  • Make the burgers:
  • Prepare the grill for direct heat and preheat to medium-high.
  • Combine the pork, cheese, chipotle pepper and sauce, salt, and pepper in a medium mixing bowl. Divide the mixture into 2 equal portions, shape into patties, and make a deep impression with your thumb in the center of each patty. Brush the grill grates with oil and grill the patties with the lid closed, 4-5 minutes per side.
  • To serve, spread some aioli on the bottom half of the bun, top with tomato, onion, pork burger, another dollop of aioli, and the top half of the bun.

    Very good. Substituted ground turkey for ground pork (couldn’t find it in local supermarket). Husband who is non-GF also enjoyed it on regular bun. The Aioli is excellent.
