Slow Cooker Bacon, Cheddar, and Tomato Quiche

  • Gluten free nonstick cooking spray
  • 1/2 pound nitrate free bacon diced
  • 1 small white or yellow onion diced
  • 6 large free range or pastured eggs
  • 1 cup milk or dairy free milk of choice
  • 2 tablespoons gluten free Bisquick
  • ½ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cups (about 8oz) grated cheddar cheese
  • 1 large tomato sliced

For serving:

  • 4 cups/pieces fruit


  • Spray the insert of a 4-quart slow cooker with cooking spray.
  • Place the bacon and onion in a cold skillet and turn the heat to medium. Cook, stirring occasionally, until the bacon is crisp and the onions are tender. Remove from the pan with a slotted spoon and drain on paper towels.
  • In a large mixing bowl, whisk the eggs, milk, Bisquick, salt, pepper, and cheese together. Stir in the bacon and onion mixture. Pour into the slow cooker. Top with tomato slices and cook on low for 6-7 hours or on high for 4 hours. The quiche is done when the sides are browned, the center is set, and it has begun to pull away from the sides.

    The quiche looks delicious. It was mentioned when I signed up there would be substations for dairy free and egg free. What about for this recipe?
