What You’ll Need:

  • 3 c brown rice chickpea or quinoa pasta
  • 4 ripe tomatoes cut into chunks
  • 2 oz about ¾ c fresh basil, coarsely chopped
  • 2 cloves garlic minced
  • 6-8 oz ounces buffalo mozzarella cheese cubed
  • ½ tsp sea salt
  • 2 Tbsp olive oil


  • Bring a large pot of lightly salted water to a boil & prepare pasta according to package instructions.
  • While pasta cooks, chop & mince veggies & cheese.
  • Drain pasta & return to the pot. Stir in prepared veggies, cheese, salt & olive oil. This dish is equally as good cool as it is warm!
